Cilantro Lime Hummus

Hummus has always disappointed me in the past because it’s so bland, it literally just tastes like chickpeas. And if you want a hummus that has a bit more of a flavor kick, you have to be ready to shell out some cash. Well this hummus is full of flavor, doesn’t cost you an arm and a leg, and is so easy to make. Also, it tastes amazing! I had to separate it into lots of small containers just to ensure I wouldn’t eat it all in one sitting…

Two things you might notice are different about this hummus recipe: no chickpeas &  no tahini

I chose to use white northern beans instead of chickpeas/garbanzo beans. The best part about using white northern beans as a hummus base is that they provide a milder flavor and a smoother texture, letting your other ingredients really shine through.

If you don’t have tahini/sesame seeds or you want to add a bit of extra nutritional value to your hummus, a great substitute is ground flax seeds mixed with a bit of oil. Your body isn’t great at breaking down whole flax seeds so make sure to grind them or buy some already ground so you can get some awesome health benefits:

  • Extremely high in both soluble and insoluble fiber
  • Lots of essential fats and b-vitamins which can help reduce dryness and flakiness of the hair and skin
  • Lowers cholesterol
  • Packed with antioxidants

You can put ground flax seeds in just about anything: smoothies, hummus, salad dressings, oatmeal, basically any baked good, crusted meats, etc.

 

Ingredients:

  • 15oz white northern beans (not paleo)
  • ¼ cup fresh lime juice
  • 1tbsp lime zest
  • ¼ cup fresh cilantro
  • 1/8 cup ground flax seed
  • 1/8 cup olive oil
  • 1-2tbsp chili powder (optional – but I highly recommend!)
  • 2-3 cloves garlic
  • 1 tsp sea salt

Prep:

  1. If you’re using dried beans:
    – rinse the beans
    – put in a saucepan and cover with an inch of water
    – bring to a boil and boil for a few minutes
    – remove from heat and let them soak for 1 hour
    – drain
  2. If you’re using canned beans, rinse and drain
  3. Whisk flax seed and olive oil and let stand for 10-15min to soak
  4. Slice, zest, and juice lime

Cooking:

  1. Place all ingredients in a blender or food processor
  2. Blend until smooth
